Food waste is a major environmental challenge. If food waste were a country, it would be the third largest emitter of greenhouse gasses in the world. And to make matters worse, we throw away more than 3 million tonnes of food in the Nordics alone.
In this episode of Nordic Talks, we take a closer look at how imperfect produce are handled in the food industry and ask: Are ugly vegetables the black swans of the plant world? What do curly carrots and Game of Thrones have in common? And why is the market for ugly vegetables suddenly taking off in Norway and China?
This episode was produced during an event co-hosted by the Nordic Food Policy Lab, The Nordics project and Nordic consulates in Shanghai. You can listen to this episode on Spotify, Apple Podcasts or on the Nordic Talks website.
