I was asked to write a piece about the future of sustainable food consumption for Sustainable Growth the Nordic Way, a web magazine by the Nordic Council of Ministers. I decided to look at the topic from the point of view of entrepreneurship and innovation in the Nordic Food sector.
There has never been a more interesting time for food innovation. Sure, you’d be correct in thinking that the way we currently produce and consume food is out of whack. But there are glimmers of hope when you part the curtains of gloom. Greater awareness and recognition of the impact that our daily choices have on human health and the environment are two of the key drivers of this sea-change.
